About This Project


The Acetomodena vinegar farmhouse is located in Modena, immersed in the green Modenese countryside and surrounded by its own vineyards. Società Agricola Acetomodena (Acetomodena Agricultural Society) is a project which the Vecchi family passionately wanted to be directed towards the future, thanks in part to the extensive use of renewable energy, while at the same time maintaining roots firmly embedded within the traditions of Modena.  Traditional Balsamic Vinegar of Modena derives from the fermentation of cooked must by particular strains of acetic bacteria, often organized in bacterial colonies called “mothers” and the subsequent slow maturation which occurs after a long period of aging in a series of various wooden barrels. For the excellent quality and the standard producing, in the April of 2014 the Acetomodena vinegar farmhouse obtained BRC and IFS certifications
